The Bikini Cocktail

Yields 10 guests

For the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Drink (yields 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Directions

For the Citrus Syrup: Combine the listed components inside a pan, bring to a gentle boil, agitating to dissolve. Then, take off the heat allowing it to cool fully. Pour into a clean bottle, cap it and refrigerate it in the refrigerator, it can be stored for up to one month.

Preparing the Premix: Pour all the liquid ingredients into one large bottle, let it rest for 60 minutes, then pass it through preferably using cheesecloth, to ensure it's fully clarified.

For serving: Add 85ml from the batch mix into your mixing glass filled with ice, and stir gently for a minute to cool it down. Strain into a chilled martini glass or a similar vessel, decorate with the cranberries adding the final touch with a brief mist of the essential oil over the drink.
